HERE’S HOW TO CREATE AMANDA CORDONY’S
DELICIOUSLY MOREISH GINGERBREAD MEN COOKIES:
Makes: 30 mini Gingerbread Men Cookies
Prep Time: 20 minutes + 30 minutes refrigeration
Cook time: 10 minutes + resting time
1 cup pitted dates
100g salted butter
2 tablespoons maple syrup
1 tablespoon ginger powder
1 teaspoon cardamom powder
1 teaspoon bi carb soda
1 1/2 cups plain flour
Gingerbread Man Cookie Cutter
Step 1: Boil a pot of water and then add the pitted dates to soak for 5 minutes. Drain and discard the water from the pitted dates and place dates into a food processor. Blend until smooth.
Step 2: Add butter, maple syrup, ginger powder, cardamom powder, and bi carb soda in with the dates and blend again until smooth. Scrape down with a spatula and blend again. The date mixture will be smooth and fluffy.
Step 3: Tip into a bowl and add the plain flour bit by bit, mixing in until all combined. Roll into a ball and wrap in glad wrap. Place in the fridge for 30 minutes.
Step 4: Preheat the oven to 180C. Cut the mixture in half and place each half in between two sheets of parchment paper. Roll flat so the gingerbread is 5mm thick. Using your Gingerbread Man Cookie Cutter, cut gingerbread men shapes and take leftover gingerbread away from cut men. Repeat process.
Step 5: Slide the parchment paper onto a flat baking tray and bake for 10 minutes. Let cool before moving off the tray. Serve.
